Best Ingredients Ever:

3 cups water

1 ½ cups uncooked quinoa

1/2 cup coarsely chopped seeded tomato

3/4 cup chopped fresh mint or parsley

1 can sliced organic black olives

1 zucchini chopped up small

½ cucumber chopped up small

1/4 cup fresh lemon juice

3 tablespoons chopped green onions

2 tablespoons extra-virgin olive oil

2 teaspoons minced fresh onion

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

 

How to Make Your Masterpiece:

Rinse quinoa really well under running water for 3 minutes

Combine water and quinoa in a medium saucepan; bring to a boil.

Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.

Stir in zucchini with 3 minutes left to cook;

Remove from heat; fluff with a fork.

Stir in remaining ingredients.

Put in glass container and put in fridge

To Make:

Pull out of fridge and serve chilled or warm on stove.
